I made this one on a whim last night. Probably some improvements to be made, but in the end it came out good after I had thoroughly pureed the hell out of it. Don’t go halfway, it will be gritty and weird.

What you’ll need:

3-4 Broccoli florets (you know, one rubber band’s worth of broccoli at the store)
1 8oz can of Chicken Stock
1 12oz bottle of beer (PBR natch!)
1/4 cup of Milk (or cream, I would have used cream if I had it)
1 large yellow onion
2 Carrots
2 Cloves of Garlic
2-3 Tablespoons of butter
2 Tablespoons of flour
1 Teaspoon of Oregano
Salt and Pepper
2 cups of shredded SHARP cheddar cheese (add more to taste)

What you’ll want to do:

Peel and chop the carrots, garlic and onions. It doesn’t matter how pretty they look because you’re going to jam in this in the blender anyway. Remove the stems from the broccoli and chop up the florets. If you want to add the stems to the soup, that’s totally fine.

In your medium sized soup pot, sauté the onions, garlic and carrots until the onions are soft in 2 tablespoons of butter. Add the broccoli and saute for a few minutes. Remove the veggies and add additional butter if the pan is dry. Make a roux with the butter and flour (basically dump the flour into the pan once the butter is meted and hot). Stir real good to keep it from burning and dump in the beer. Add the veggies back and throw in the chicken stock. If the veggies aren’t covered with liquid, add some water until they are. Add the oregano and cover. Cook for 10-15 mins until the broccoli and carrots are good and soft.

Puree the soup, it shouldn’t be gritty when you’re done. Add the soup back to the pot and add the milk and cheese over Med-Low heat. Stir until the cheese is melted. Add salt and pepper to taste. If the soup isn’t creamy or gritty you can always do what I did and stick it back into the blender until it cooperates. Note: the soup will be green!
